Thaumatin is a naturally occurring protein sweetener derived from the katemfe fruit in West Africa. It is used as a flavor enhancer and sweetener in food and beverage products, including soft drinks and dairy products, and is also incorporated in pharmaceuticals to improve taste.
Physical Properties
Thaumatin is a water-soluble protein that appears as a white to off-white powder. It is heat-sensitive and stable in acidic conditions, making it suitable for various food and beverage formulations. It has an intense sweetness, approximately 2,000–3,000 times sweeter than sucrose by weight.
