Ascorbic Acid, also known as Vitamin C, is widely used in the food industry for its antioxidant properties. Physical Properties
Ascorbic Acid is a water-soluble organic compound. It appears as a white to slightly yellow crystalline powder with a sour taste and is highly soluble in water but poorly soluble in organic solvents. It is sensitive to heat, light, and oxygen, which can cause degradation, and exhibits strong reducing (antioxidant) properties in various formulations.
