Isomaltose is used as a sugar substitute in the food industry, particularly in sugar-free candies and other low-calorie products. Its slow metabolism compared to sucrose makes it suitable for diabetic-friendly formulations, and it is also naturally present in honey, wheat, and barley.
Physical Properties
Isomaltose is a disaccharide composed of two glucose units linked by an α-1,6-glycosidic bond. It appears as a white crystalline powder that is soluble in water and has a mildly sweet taste. It is stable under standard storage conditions and exhibits slower digestibility compared to regular sugar.
