Industrial Applications
Isomalt is widely used in the food industry as a sugar substitute, particularly in sugar-free hard candies due to its resistance to moisture absorption. It is also incorporated into baked goods and finds applications in the pharmaceutical industry as a carrier in lozenges.
Physical Properties
Isomalt is a sugar alcohol with a crystalline, white appearance and a sweet taste similar to sucrose but with lower caloric content. It is highly soluble in water, stable under heat, and exhibits low hygroscopicity, making it suitable for a variety of food and pharmaceutical formulations.
